Salmon spaghetti with lemon, bok choy and baby spinach
Love this super quick, throw whatever greens are lurking in the vege draw, meal. Inspired by a recipe I came across on healthyfood.com I had to make several changes as I didn't have all ingredients on hand but it was super good!
Ingredients for 3-4

- 250g dried wholemeal spaghetti (about half a packet)
 - Half head broccoli, cut into small florets
 - 4 small boy choy, sliced
 - Packet smoked salmon, I had a packet of slices in the fridge but you could used a fillet, flaked or can
 - 1 cup coconut milk, or cream or yoghurt
 - 1 large lemon, zested
 - handful of baby spinach leaves, or rocket
 - freshly ground pepper
 
- Cook the spaghetti (follow packet instructions) and then pop the broccoli and bok choy in the same pot around 3 minutes before the end. Drain.
 - In the same pot add the salmon, coconut milk, lemon zest and baby spinach and mix to combine.
 - Season with freshly cracked pepper and enjoy!
