Salmon spaghetti with lemon, bok choy and baby spinach

Love this super quick, throw whatever greens are lurking in the vege draw, meal. Inspired by a recipe I came across on healthyfood.com I had to make several changes as I didn't have all ingredients on hand but it was super good!

Ingredients for 3-4
  • 250g dried wholemeal spaghetti (about half a packet)
  • Half head broccoli, cut into small florets
  • 4 small boy choy, sliced
  • Packet smoked salmon, I had a packet of slices in the fridge but you could used a fillet, flaked or can
  • 1 cup coconut milk, or cream or yoghurt
  • 1 large lemon, zested
  • handful of baby spinach leaves, or rocket
  • freshly ground pepper
Method takes around 10-15 mins
  1. Cook the spaghetti (follow packet instructions) and then pop the broccoli and bok choy in the same pot around 3 minutes before the end. Drain.
  2. In the same pot add the salmon, coconut milk, lemon zest and baby spinach and mix to combine.
  3. Season with freshly cracked pepper and enjoy!
