Roasted Cauliflower on Bean Mash
Easy & quick dish to whip up, basically roasted cauliflower on beans! Yum!
Ingredients (serves 2)
- Medium cauliflower, cut into florets. Include the stalk.
- 1 tsp ground cumin
- 1 tsp ground turmeric
- extra virgin olive oil
- 1 x 400g tin of butter beans, drained
- 1 tsp dijon mustard
- 1tsp apple cider vinegar
- 1 small stalk fresh rosemary, leaves chopped finely
- 1 tbsp fresh thyme, chopped finely (if you don't have fresh, use 1 tsp of dried)
- juice of small lemon
- 1 tbsp oat or rice milk (or water/milk)
- 20g pine nuts (roasted)
- handful fresh parsley, roughly chopped
- freshly ground sea salt pepper
Method
- Preheat oven to 180C
- Place cauliflower onto oven tray with turmeric, cumin, splash of olive oil and pinch of salt & pepper mixing well so florets are coated.
- Roast cauliflower for around 20 minutes, until golden. I added a few large garlic cloves in last 10 minutes and added to bean mash.
- While cauliflower is roasting, make the bean mash by adding into a food processor: drained beans, mustard, vinegar, rosemary, thyme, lemon juice, milk & season. If your garlic is ready throw it in! Pulse until smooth.
- Divide mash into two bowls and serve roasted cauli on top with fresh parsley & pine nuts. Enjoy!
