Carrot Fritters


These carrot fritters are delicious and healthy and easy to make. Carrot's are packed with nutrients and are a good source of fiber. They are also low in calories and fat. Tick, tick!

Ingredients
  • 2 cups of grated Carrots - about 4 large whole Carrots
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • 2 large (or 3 small) free range eggs
  • 3-4 garlic cloves chopped finely or minced
  • 1 small onion (or 2 spring onions, white part only) chopped finely
  • ½ cup Breadcrumbs
  • Freshly ground pepper and rock salt to taste
To serve: I normally mix up a simple salad of baby spinach and avocado drizzled with olive oil and mix together some yoghurt and pesto to make a dressing.

Method
  1. Mix carrot, cumin, coriander, eggs, garlic, onion and breadcrumbs together in a bowl. Season with salt and pepper.
  2. Heat a 1 tsbp olive oil in a large frying pan, medium heat and cook 1/4 cup of mixture until golden on both sides.
