Feijoa Chutney
Love feijoa season and love this chutney sweetened with dates and a little honey, which you can leave out for a vegan version. Enjoy this with my Cauliflower Steaks dish.
Ingredients
- 3 cups feijoa flesh (I added approx. 1 tsp of finely chopped feijoa skins to give it an extra zing)
- 1 cup medjool dates, chopped roughly
- 1 lime, sliced thinly, and roughly chopped, skin and all
- 3/4 cup apple cider vinegar
- 1/3 cup apple syrup (optional, I just had some lying around in the cupboard and thought why not!)
- 1-2 tsp honey (optional)
- 1/4 cup water
- 1 teaspoon ground ginger
- small dash cayenne pepper
- pinch of sea salt
Method
Easy as! Place all the ingredients into medium size pot bring to the boil then simmer for 30-40 minutes until it becomes thick and sticky like then enjoy with all sorts of recipes.
