Feijoa Pancakes (sugar free)


Most pancake recipes are filled with processed sugar but you don't need it when using feijoa's that are naturally sweet. Especially when you chop some up and let them sit in their own juices for a bit, then use as a topping. I also used organic brown rice flour so they're gluten free if that's your thing.

Ingredients

  • 20mls extra virgin olive oil plus extra for frying
  • 1 cup brown rice flour (I'm sure you could try other flours like chickpea as well or just use normal flour if that's all you have on hand)
  • Pinch of salt
  • 1 1/2 teaspoons baking powder
  • 1 egg
  • 3/4 cup milk (I used oat milk)
  • 2 cups feijoa flesh, roughly diced

To serve: more feijoas and a squeeze of lemon juice and/or coconut yoghurt

Method

  1. Mix the flour, salt and baking powder in a bowl.
  2. In a separate bowl beat egg and milk together.
  3. Make a well in the dry ingredients, add egg and milk mixture and mix so there are no lumps. Add olive oil and mix thoroughly. Add more olive oil if you need a smoother mixture. Finally, fold through feijoas.
  4. Add tablespoonfuls of the mixture to a medium-hot fry pan until bubbles start to appear on one side. Flip and continue to cook until golden brown on both sides. 
  5. Serve warm with toppings of choice & enjoy!
