Raw Chocolate Walnut Fudge
So 'fudgy' & a great alternative when those sugar cravings hit! Doesn't take long to make & just 1 hour in the freezer and you're sinking your teeth into deliciousness. I didn't have enough walnuts so I added peanuts as well.

Ingredients:
- 1 cup walnuts, roughly chopped (or a mix of your favourite nuts)
- Flesh of 1 avocado
- 10 dried figs, softened in boiling water for 10 minutes, then drained
- 1 tbsp + 1 tsp honey (or make it vegan & use date syrup)
- 1 tsp vanilla bean paste or extract
- 2 tbsp coconut oil, melted
- 3 tbsp cacao powder
- ½ tsp ground ginger
- ½ tsp ground cinnamon
- Pinch sea salt
- Grated chocolate to serve (optional)
Method
- Line a loaf tin with baking paper. Set aside.
- Place the walnuts in a pan and heat over medium heat. Add 1 tbsp honey, allow to melt and stir to evenly coat the walnuts in honey & nuts turn a nice golden brown. Remove from the heat.
- In a blender, add the avocado, figs, 1 tsp honey, vanilla, coconut oil, cacao, ginger, cinnamon + salt. Blend until a smooth mixture is formed.
- Add the walnuts to the chocolate mix and evenly stir through.
- Pour mixture into the lined tin. Place in the freezer to set for 1 hour. Remove & cut into pieces & sprinkle with cacao or grated chocolate. Store leftovers in airtight container in the fridge for up to 2 weeks or frezze for up to 2 months. Enjoy!
