Cheese Scones
Long weekends call for some healthy cheese scones...almost sugar free and almost vegan except for the cheese. Oat milk makes a healthier (but still creamy) alternative to full cream dairy milk, just make sure the one you choose doesn't have sugar & crap in it. These are nutrient dense compared to ones made with white flour and lot's of sugar but still crispy on the outside. Serve warm straight from the oven & enjoy.
Ingredients
- 2 cups wholemeal spelt flour (plain flour is fine)
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 teaspoon smoked paprika
- 2 cups grated tasty cheese (a little parmesan on top works well)
- 1 cup oat milk (full-cream milk works as well)
Method
- Sift the flour, baking powder, sugar, salt and smoked paprika into a bowl.
- Mix in the grated cheese.
- Make a well in the centre and pour in the milk.
- Mix lightly then turn out on a floured bench.
- Shape into a rectangle about 3cm high. Cut into 8 and transfer on to a baking tray.
- Bake at 200°C for 15-20 minutes until golden. Serve warm with butter...yums!
