Kūmara Slow Cooker Brownies
Loving this 'slow bro' Brownie recipe from the "I Quit Sugar" cookbook. The kūmara brings sweetness and density plus, throwing everything into the slow cooker makes it pretty easy to whip together.
Ingredients
- olive oil or butter, for greasing.
- 3 tablespoons coconut flour.
- 2 tablespoons raw cacao powder.
- 1/2 teaspoon vanilla powder or 1 tsp vanilla essence
- 1/4 teaspoon baking powder.
- 1/4 teaspoon ground cinnamon.
- pinch of sea salt.
- 50 g dark (85-90% cacao) chocolate, roughly chopped (this is optional but does bring an extra yum to the recipe!)
- 1 large kūmara, peeled and roughly chopped, then boil for approx.10 minutes until soft. Then mash it.
- 3 eggs, whisked.
- 1/4 cup coconut oil.
- 1/3 cup rice malt syrup.
Method
- Turn your slow cooker to warm while putting the ingredients together.
- Grease the slow cooker insert, line with baking paper so that it reaches halfway up the sides.
- Combine dry ingredients. In a separate bowl add all the wet ingredients including kūmara and stir well.
- Stir in dry ingredients and mix well. Pour into the lined slow cooker and spread evenly.
- Cover and cook on low for 2 hours or high for 1 hour. Remove lid and cook for a further 30 minutes or until a skewer comes out clean. Enjoy!
